Making Zoodles with a KitchenAid Spiralizer

I cannot begin to tell you how many failed attempts I’ve made in learning how to make zoodles. It took MANY failed attempts to learn how to spiralize zucchini. However, when you get a zucchini to spiralize just right, you can utilize so much of the plant!

I also really love to eat spaghetti, but try to limit my gluten intake. Gluten-free noodles are ok, but just not the same. I have really come to love using zoodles as a noodle substitute. I’ve also found that after spiralizing zucchini, the zoodles can either be dehydrated or frozen so they can be used later. I personally have found that freezing them is less steps so that is my preferred method to preserve them for later.

Here are a few things we have learned growing zucchini over the last few years:

Small zucchini from the garden will be your friends. The zucchini cannot be too big. If it’s too big (over 12 inches), it’ll be soft and the middle will be seedy which makes it difficult for the spiralizer blade to engage with the zucchini.

Cut the zucchini the same length as the spiralizer arm-about 6-8 inches. I do this to maximize the length of spiralizer.

Don’t cut the ends. Sometimes the temptation to cut the tip of the zucchini that still has a stem all the way to the end, but I have found that you want to keep part of the stem as the spiralizer fruit and vegetable skewer will hold in place best when it skewers directly into one of the ends.

Steps to successfully make zoodles with a KitchenAid Spiralizer:

1. Attach the blade and set up a bowl under the blade to catch the zoodles.

2. Skewer the zucchini.

3. Set the blade so it’s putting pressure on the cut end of the zucchini.

4. Turn the mixer on-I’ve found starting faster helps the blade to catch (speeds 4-6).

5. Catch the seeds so you don’t have to pick them out later.

6. Store in the fridge to use in the next few days. Or dehydrate or freeze to preserve for later.

7. To cut down on food waste, you can put the ends that cannot be spiralized (or any failed attempts to spiralize) in food processor and grate them down to be used in baking.
